EXCITING NEW PARTNERSHIP WITH LIGHT FRY AND WHITCO

I'm delighted to announce my partnership with WhitCo one of the hospitality industry’s leading experts in commercial kitchens and restaurants. WhitCo have recently become the sole distributors for LightFry commercial air fryers in the UK & NI and invited me to join them on this exciting journey to discover the undeniable benefits to businesses of this clever technology. 

LightFry’s groundbreaking airfrying technology is redefining what’s possible in professional kitchens and at WhitCo’s Customer Experience Centre, you can experience it firsthand under my guidance.

When Whitco approached me to road test the LightFry commercial airfrying technology, I was curious to see just how far I could push the boundaries of this fascinating technique.  As I own an airfryer myself, I was au fait with what was possible in my own kitchen, but was blown away by the results I created when we started to get serious about food! As always my focus was on taste, taste and more taste and using WhitCo’s development kitchen I proceeded to put the machine through its paces.

After 18 months of menu development, cooking trials, and sensory testing, we explored every angle of what Lightfry™ could do. We worked with food manufacturers eager to learn more and trialled a variety of chips from economy to premium from trusted names like McCain and Koffmann.  

We put the technology through its paces, preparing every style and shape of potato, from fresh to frozen, straight-cut to triple-cooked. And we didn’t stop there. We tested fresh and roast vegetables, hors d’oeuvres, meat and fish (both coated and uncoated), cheesy bites, bread, and so much more.

But it wasn’t just about cooking we were rediscovering the pure, mouth-watering flavours of foods too often masked by oil. We even created concepts to celebrate the “Chip Hero” in grab-and-go restaurants and quick-service formats, delivering speed and volume for high-demand environments. Everything was tested, from frozen to refreshed cooking, and explored its role in contract catering, across government and private sector kitchens, on and offshore. 

Why wouldn’t a restaurant, big or small, consider air frying as a smarter alternative to deep-fat frying? We covered all bases, health and wellbeing benefits, menu labelling, and sustainability credentials. We addressed fire safety and open-kitchen risks, considered indirect costs like cleaning, slip and burn hazards, and highlighted the major cost savings from eliminating oil and FOGs. And through it all, we kept discovering more and more value.

I will be leading live demonstrations, masterclasses, and training sessions designed to show how LightFry™ delivers outstanding taste, texture, and consistency all without the need for oil.
